Roasted Garlic

Ingredients:

1 cup peeled garlic cloves

1/2 cup extra virgin olive oil

pinch of salt and pepper mix


Preparation:

Preheat oven to 350F.

In a small bowl combine garlic cloves with extra virgin olive oil and toss to cover garlic in oil on all sides. Season with a pinch of salt and pepper mix and toss again.

Place mixture in a glass baking dish and put on center rack in oven. Cook for 30 minutes, stirring every five minutes. When golden brown and soft to the squeeze remove and let cool.


Makes 1 cup


Note: Roasted garlic will enhance any dish, from pasta to roasted vegetables. Its easy to make and can be frozen for later use. Puree the entire mix with a food processor or immersion/stick blender. You can find a cheap one on Amazon to try and see if you like it, but it will be good for soups and sauce as well. Well worth the investment, in my opinion.
